Chocolate Berry Layer Cake

Next time you’re heading to a gathering and you’re in charge of bringing the dessert, we’ve got you covered! This Chocolate Berry Layer recipe combines layers of moist chocolate cake with bursts of berry goodness, and the combination is almost too good to be true!

Using only a few simple ingredients, including Maja’s vegan and gluten-free Chocolate Cake & Cupcake Mix, this simple recipe is so satisfying and sure to impress any guests with its bold flavors and beautiful colors - all while being free of the top 14 allergens! Again, almost too good to be true!

Chocolate Berry Layer Cake Recipe

Chocolate Cake Ingredients:

  • 2 pouches of Maja's Chocolate Cake & Cupcake Mix (one pouch for each 9” layer)
  • ⅔ cup applesauce
  • ½ cup oil
  • 1 cup boiling water 
  • 1 cup unsweetened non-dairy milk
  • 2 cups of mixed berries (We love the combo of strawberries, raspberries, & blueberries)
  • Optional: 2 tsp vanilla extract

Whipped Cream Ingredients:

  • 2 cups Vegan Heavy Cream 
  • ⅓ cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • Optional: ½ tsp almond extract

        Instructions: 

        First, preheat your oven to 350° Fahrenheit and grease 2 round 9” pans. In a large bowl, add the 2 pouches of Maja’s Chocolate Cake & Cupcake Mix. Stir in the applesauce, oil, and non-dairy milk with a stand or hand mixer until well combined. Add in the vanilla and give the mixture one more quick stir. 

        Next, boil some water and add it to the batter. Mix on low speed until smooth. Pour half of the batter into each round pan, and place them in the oven for 20-22 minutes or until the toothpick comes out clean. Set aside to cool. 

        Now, you can begin the whipped cream. Using a stand or hand mixer, combine the heavy whipping cream, confectioners’ sugar, and vanilla/almond extracts on medium speed. Once the consistency becomes thick and fluffy, you are good to go! Set the whipped cream aside and chop up all the berries. 

        Once the cakes have completely cooled, you can remove them from the pans and place the first cake on your desired plate or cake stand. Add a layer of whipped cream and a layer of berries on top. Place the second cake on top of the berries and add another layer of whipped cream and top with berries. 

        Feel free to garnish with a unique design of berries or add some edible florals!
