Blueberry Oat Crumble Bars Recipe

For the Crust:
- ¾ cup butter
- ½ cup brown sugar
- ½ cup Maja's Cacao + Coconut Overnight Oats
- 1 cup rolled oats
- ¾ cup oat flour
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
Blueberry Layer:
- 2 cups blueberries
- 3 tablespoons granulated sugar
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
Oat Topping:
- 3 tablespoons butter, melted
- ¾ cup rolled oats
- ¼ cup brown sugar
- 1 teaspoon cinnamon
Instructions:
Begin by preheating your oven to 350°F. You’ll want to prepare the crust first. In a large bowl, cream brown sugar and butter until smooth. Add Maja's Cacao + Coconut Overnight Oats, rolled oats, oat flour, vanilla extract, and baking powder. Mix until well combined.You’ll then want to press the crust mixture firmly into the bottom of a square 9x9 baking dish, creating an even layer.
Next, you can begin preparing the blueberry layer. In another bowl, combine blueberries, granulated sugar, lemon juice, and cornstarch. Mix until the blueberries are evenly coated.
Begin the layering process by first spreading the blueberry mixture evenly over the crust in the baking pan. The next layer is the oats topping. In a small bowl, mix melted butter, rolled oats, brown sugar, and cinnamon until thoroughly combined. Sprinkle the oats topping evenly over the blueberry layer.
Place the pan in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the blueberry filling is bubbling.
