Vegan Pineapple Upside-Down Cake Recipe
Ingredients:
Pineapple Topping:
- 2/3 cup Earth Balance Vegan Butter
- 1 cup brown sugar
- 1 can pineapple slices
- Maraschino cherries
Cake:
- 2 cups of Maja's Pancake & Waffle Mix
- 1 cup milk
- 2 tablespoons cornstarch
- 1/4 teaspoon baking soda
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1/2 cup coconut extract
- 3/4 cup sugar
Instructions:
First, preheat your oven to 350°F. Next, to prepare the pineapple topping, you’ll want to melt the Earth Balance Vegan Butter and pour it into a round cake pan, brushing the sides to coat them evenly. Add brown sugar to the pan, spreading it into a paste-like consistency. Arrange pineapple slices and maraschino cherries in a decorative pattern on the bottom of the pan.
Next, you can prepare the cake batter. In a bowl, whisk together milk and cornstarch until smooth. Let it sit for a few minutes. In another bowl, combine the Maja's Pancake & Waffle Mix, baking soda, vegetable oil, vanilla extract, coconut extract, and sugar. Gradually pour in the milk mixture, stirring until well combined.
Spread the cake batter evenly over the pineapple topping in the pan. Tap the pan on the counter to remove any large air bubbles. Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for at least 20 minutes. Carefully run a knife around the edges of the pan to loosen the cake. Place a serving plate upside down on top of the pan, then quickly and carefully flip the pan and plate together to release the cake onto the plate.
