Waffle Ice Cream Sandwich
Summer is here, and you know what that means - ice cream time!
If you are looking for a unique way to give your kids a sweet treat with a little more substance, check out this waffle ice cream sandwich recipe. Maja’s Pancake and Waffle Mix is plant-based, free of the top 14 allergens, and truly satisfying and tasty. Your kids will love making these sandwiches on their own by adding their favorite ice cream flavors and toppings!
Waffle Ice Cream Sandwich Recipe
Ingredients:
Waffle ingredients:
- 1 cup Maja's Pancake & Waffle Mix
- ⅔ cup milk
- 2 tbsp oil
- Optional: 1 tsp vanilla extract
Filling:
- Pint of favorite ice cream (we love Oatly Vanilla non-dairy ice cream)
Recipe:
Begin by preparing your waffle iron by heating it up. We think a Belgian waffle maker is best for this recipe!
In a large bowl, add the waffle mix and whisk in the milk, oil, and optional vanilla extract until well combined. Grease the waffle iron, then scoop some of the batter onto it and cook for 2-3 minutes or until golden brown. Set the waffles aside to cool completely.
Assemble the sandwiches by adding a scoop of ice cream in between the two waffles. Check out the attached video for an aesthetically pleasing way to slice the ice cream!
Don’t forget to add your favorite toppings! You can’t go wrong with a drizzle of chocolate or caramel, some fresh whipped cream, fresh berries, or colorful sprinkles.
