Green Pistachio Pancakes with Whipped Cream Recipe

Ingredients:

For the pancakes:

  • 1 package Maja's Pancake & Waffle Mix
  • ½ cup pistachios
  • 1 ⅓ cup unsweetened non-dairy milk
  • ¼ cup oil
  • 1 tsp green matcha tea
  • 1 tsp pistachio extract

For the whipped cream:

  • 1 cup aquafaba
  • 1 cup icing sugar

 

Instructions: 

Take a large bowl and begin by adding the pancake mix. Whisk in the milk, oil, matcha tea, and pistachio extract and combine together. Add in the chopped pistachios. If you have whole pistachios, be sure to chop them up first or add them to a food processor!

Next, you’ll want to heat a greased skillet or flat top griddle on medium-low heat. Pour ⅓ cup of batter onto the skillet and cook for about 2-3 minutes on each side. You want the pancake to be a nice golden color. Continue this step until all the batter is gone.

To finish, prepare the whipped cream topping. Add the aquafaba and icing sugar to a medium sized bowl. With your hand mixer, whip the cream until it becomes nice and fluffy. Add a dollop on top of your pancakes and top it with any extra chopped pistachios.

Serve immediately and enjoy!
