Let’s face it - this is a stressful time of year! If you’re anything like us, you are always on-the-go with work commitments, school, kids, social calendars, etc. We get it! For that reason, we pride ourselves on providing our customers with food options that are not easy to make, but more importantly, that are nutritionally sustaining, high in protein, and full of superfoods to help us get through our day and feel great about ourselves at the same time.

High Protein Banana Apple Cobbler Recipe


The filling:

  • 8 medium/large apples
  • 2 tbsp lemon juice (1 lemon)
  • ½ cup cane or coconut sugar
  • 1 ½ tsp ground cinnamon
  • 3 tbsp cornstarch
  • ⅓ cup water
  • ½ tsp ground ginger (or ¾ tsp fresh ginger)
  • 1 pinch nutmeg

The topping: 

  • ½ cup of the multiserve Banana Bread Overnight Oats (or two single serve pouches)
  • ½ cup rolled oats
  • ½ cup almond meal
  • ½ cup gluten-free flour blend
  • ½ cup cane or coconut sugar
  • ½ cup brown sugar
  • ½ cup chopped pecans
  • ¼ tsp sea salt
  • 1 tsp ground cinnamon
  • ½ cup oil (preferable coconut oil)


    Begin by preheating your oven to 350° Fahrenheit. While your oven is heating up, you can start preparing the cobbler filling. First, peel the apples and then remove the cores and cut into thin slices. Add them to a large bowl along with the remaining filling ingredients. Combine all ingredients and then add to a 9x13 baking dish.


    Next, combine all ingredients for the topping into another large bowl. Mix well and then spread the topping over the apple mixture in an even layer. 

    Bake the cobbler for 1 hour or until the filling is bubbly and the apples are nice and soft. Your house is going to smell amazing!


    Remove from the oven and enjoy!
