S’more Cookie Skillet Recipe
Yield: 1 (8-inch) cookie
Prep time: 5 minutes
Cook time: 30 minutes
Total time: 35 minutes
Special equipment: 8-inch cast iron skillet
Ingredients:
- 1 pkg. Maja Chocolate Chip Cookie Baking Mix
- 6 tbsp. Non-Dairy butter
- 2 tbsp. Water
- 1 tsp. Vanilla extract
- ½ cup Vegan Graham Crackers (broken into bite-sized pieces)
- ½ cup Mini Vegan Marshmallows (i.e. Dandies)
- ¼ cup Dark Chocolate (chopped)
Recipe:
First, preheat your oven to 350 °F and generously grease your 8-inch skillet with oil or butter.
Begin to combine some ingredients by beating the butter and water together on medium speed. We recommend a hand mixer for this! Beat for about 1 minute, or until the texture is creamy, and then add in the vanilla extract.
Next, add Maja’s baking mix to the bowl and beat until the mixture is well combined. Add half of the graham cracker pieces and half of the marshmallows to the mix (¼ cup of each) to create a dough-like consistency.
Press your cookie dough evenly into the greased skillet, and then scatter the remaining graham crackers, marshmallows, and chopped dark chocolate chips over the top of the cookie. Lightly press them into the dough.
Place the skillet into the oven for about 28-30 minutes or until the cookie is golden brown. Try to let the cookie cool for at least 5 minutes before serving… even though we know you will want to dig right in!
Yum!
