Who doesn’t love layers of yummy goodness? This sugar cookie trifle combines the best of fresh summer berries with the comforting taste of sugar cookies and creamy vegan custard. It is a dessert that is perfect for sharing at a social gathering or enjoying with your loved ones on a cozy night at home.

Sugar Cookie Trifle Recipe

 

Ingredients:

Sugar cookies:

  • 1 pouch Maja Sugar Cookie Mix 
  • 6 tbsp butter (or Vegan butter if preferred)
  • 2-3 tbsp milk
  • Optional: 1 tsp vanilla extract

Vegan custard: 

  • 1 ½ cups of your favorite plant-based milk (Ex. soy, almond, or oat)
  • ⅔ cups coconut cream
  • ½ cup cornstarch
  • ⅓ cup sugar
  • ⅛ tsp turmeric 
  • 1 tsp vanilla extract

Remaining trifle ingredients: 

  • 2 cups fresh berries (we love a mix of strawberries, blackberries, raspberries, and blueberries)
  • ½ cup of your favorite jam
  • 2 ½ cups whipped cream (we love this Whole Foods' Plant-Based Whipped Topping)

 

Instructions: 

The first step of this recipe is to prepare the sugar cookies. Preheat your oven to 325°F and line a baking sheet with parchment paper. In a large bowl, combine all the sugar cookie ingredients. With a stand or hand mixer, mix the dough until it becomes smooth. Scoop out the dough into 2 inch balls and bake the cookies for 10-12 minutes. They will turn golden brown when they are finished. Set aside to cool! 

The next step is to prepare the custard. In a medium-sized saucepan, combine all of the custard ingredients over medium heat. Whisk the custard continuously until no lumps remain and the liquid becomes thick. After about 4-5 minutes of mixing, the custard should have reached the perfect consistency. Remove it from the heat and continue to stir for another minute or so to avoid the custard sticking to the pan. Set the custard aside to cool as well.

While the cookies and custard cools, you can rinse and slice the fresh berries. Grab your favorite trifle dish, and you are about ready to assemble the layers! 

The first layer of the trifle should be sugar cookies. Line the bottom of your bowl with about half of the cooled sugar cookies. We think it is best to break them up into smaller pieces. The next layer will be a spread of fresh berries. Add about half here as well. Then you’ll want to add the jam. Drop a few spoonfuls on top of the berries and spread it evenly. The custard is up next! Add about half of the custard to the top of the spread jam. Lastly, add about half of the whipped cream on top of the custard. Repeat these steps with the remaining cookies, berries, jam, custard, and whipped cream. 

You can eat it immediately, but we suggest letting all the flavors soak together by setting the covered trifle in the fridge overnight. Either way - it will be delicious. Enjoy!
