Do you always seem to have extra bananas lying around that are too ripe to eat? Are you tired of the same old banana bread recipes? If so, you’re in good company, and Maja is here to offer a new recipe to try - Banana Oat High Protein Muffins!  

One of our favorite mixes is our Banana Bread Overnight Oats! These oats are loaded with superfoods, such as maca root, flax, and chia seeds, which will keep your body satisfied and properly nourished while you are out there tackling the real world. There are endless possibilities for these yummy oats, and we have only just begun to share ways to include them in your daily breakfasts, your mid-day snacks, and your late-night treats. 

We believe these banana oat muffins will surely double as an excellent source of nutrients as well as a quick grab-and-go breakfast when you’re in a rush in the AM.

Banana Oat High Protein Muffin Recipe

Yield: 8 muffins

Prep time: 15 minutes

Cook time: 20 minutes

Total time: 35 minutes

Special equipment: muffin pan and liners

Ingredients: 

  • 1 single serving of Maja Banana Bread Overnight Oats 
  • 1 cup milk
  • 1 ripe banana (mashed)
  • 2 tbsp oil
  • ½ tsp vanilla extract
  • ¾ cup 1:1 gluten-free flour blend
  • 1/2 cup brown sugar (or coconut sugar)
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt

Recipe: 

First, preheat your oven to 350° and prep your muffin pan with 8 liners. In a small bowl, combine the oat pouch with your favorite milk and let set for 5-10 minutes. 

While your oats are soaking, mash the ripe banana in a separate bowl until smooth, and add the oil and vanilla extract. Combine until well mixed. Next, you’ll want to add all the dry ingredients to a large bowl. Lightly mix the flour, sugar, baking soda, baking powder, cinnamon, and salt all together. 

At this point, you can add the mashed banana mix and the oats mix to the dry ingredient bowl. Gently combine all the ingredients until the flour has dissolved and you have a creamy, smooth texture. We recommend folding the batter with a rubber spatula to maintain the proper consistency!

Split the batter evenly among the 8 muffin liners by filling them about ¾ of the way. Place the muffins in the oven and bake for about 20 minutes. Remember, if you stick a toothpick in the center of the muffin and it comes out clean, your muffins are done! 

These can be served warm or after cooling off a bit. Enjoy!
