Peppermint Brownies

Peppermint Brownies Recipe
Ingredients:
Special equipment: Your favorite cookie cutters, a rolling pin, and piping bag and tips
Brownies:
- 1 pouch of Maja's Chocolate Cake & Cupcake Mix
- ⅓ cup applesauce
- ¼ cup oil
- ½ cup boiling water
- ½ cup unsweetened non-dairy milk
- 1 tsp vanilla extract (optional)
- ⅔ cup semisweet or dark chocolate chips
- 6 tbsp butter
Buttercream Frosting:
- 1 cup vegan butter
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 1-3 tablespoons plant-based milk
- ½ tsp peppermint extract or substitute ½ tsp almond extract (optional)
Instructions:
First, preheat your oven to 325°F. In a large bowl, combine Maja's Chocolate Cake & Cupcake Mix with the applesauce, oil, and unsweetened non-dairy milk. Mix in the vanilla extract if you are choosing to include it! Next, slowly add in the boiling water and beat the mix on low speed until the consistency is nice and smooth.
At this point, you’ll want to take a small bowl and add the chocolate chips and butter to it. Microwave it in short increments and mix it up until it becomes smooth and thin. Add that melted chocolate into the brownie mix and combine.
Add the batter to a greased pan and place it in the oven for 20-22 minutes. When the toothpick comes out clean, you know the brownies are done!
While the brownies bake and cool, you can begin to prepare the peppermint frosting. Begin by beating the vegan butter in a small bowl until it becomes creamy. Add in the powdered sugar, vanilla extract, and peppermint extract, and continue to beat the frosting until it becomes nice and fluffy. If you want it to be a little thinner, you can add a splash of milk!
Once the brownies have cooled, spread the peppermint frosting over the brownies until it is nicely coated. Add some crushed candy canes or Supernatural Sprinkles for some extra festive fun!
